I — The Estate
The grove grows in the red earth and limestone of Puglia, where sea wind off the Adriatic and cool autumn nights slow the fruit and concentrate its bitterness — the signature of a truly fresh oil.
We pick only the first, greenest olives of the season. The yield is a fraction of a late harvest. The flavour is something else entirely: cut grass, green almond, a peppery catch at the back of the throat.
II — The Oil
We make a single extra virgin olive oil each year, from our own trees and nothing else. Green tomato leaf, artichoke and fresh almond, with a long peppery finish.
Ships within [X] working days in a hand-finished gift box. Limited to [N] bottles per household.
III — From Branch to Bottle
By hand, at first light, before the heat of the day touches the fruit.
At our own mill on the estate, below 27°C, in small batches.
Under nitrogen in stainless steel, so nothing dulls what the tree gave.
Each bottle carries its harvest date, lot and polyphenol reading: [mg/kg].
